Simple Oxtail Stew

I was watching Andrew’s ‘Bizarre Foods’, he was having an oxtail stew dish in Spain. He really enjoyed that dish. I never had oxtail before, nor Alan. So I decided to try it out.

Bought a package of oxtail (about 3lbs) from Sam’s.. quite expensive for tails (I didn’t know any of my American; Asian or Polish friends eat oxtail, so who is eating them?).. nearly 4 dollars/lb.

Looked up recipes online.. each of them seems has lots of steps. As always… I made it a simpler way… result was wonderful. I made this dish several times later on for dinner parties, everyone loved it (they all never had oxtail dishes before).

my way of making this dish:

1. in a deep large pot, brown the oxtail all sides really well (took me 10-15 minutes), remove and set them aside

2. in the same pot, sauté 1 chopped onion, 2-4 cloves of minced garlic, then 1 cup of chopped carrots

3. add in browned oxtail, 1 cup red wine, 1/4 cup tomato paste, 2 cups crushed tomatoes with juice, Water, a handful chopped celery, 2 bay leaves, eyeball of fresh thyme, salt&pepper to taste

4. during the cooking process.. taste the sauce to adjust seasonings or vegetables.

5. bring to a simmer and simmer over low heat for 3-4 hours or till the meat is easily pull off from the bones.

6. before serving, add some chopped fresh Cilantro(optional), or garnish with fresh sprigs of thyme.

Leftover can be frozen and reheated again.

This dish best to serve with rice, the rice soaked with the rich thick sauce, and melt in mouth meat … oh my .. mouth watering even just talking about it..

Reincarnation… such a beautiful word. I came cross this word a few days ago, then never could forgot it.

How would I feel if I could remember my previous lives when to be reborn? Maybe, it’s better to never remembered.

Traffic Jam on I4

After had dinner at friends’ home, we drove on highway I4 going home. Shortly after got on highway, traffic stopped. The I4 became a huge parking lot. We moved forward inch by inch… it was one hour later we finally were able to get out of I4 on a closest exit.

The next morning, we saw the news.. it was a 37 vehicles involved accident, luckly none was seriously injured.

Bully – My little goldfish

Bully…my nearly 2 years old goldfish, survived. I replaced his water tonight, you can tell he is so happy to see us back from our trip.

PS: I wish he was still small, so I could take him with us in our trips just like we did in our 2006’s Key West trip. But now he is so hefty, his body (without the fins and the tail) is the size of my fist. The tank he lives in is a 12 gallon one, there is no way we could take him with us to a long trip any more. What should I do?

On the way home (Day 25)

Finally, this morning, we were on the road to home.. our sweet home in FL. We had been away for nearly one month, I was homesick terribly… our little garden in the backyard.. my big fat goldfish Bully (our dog Shag was in the car with us at that moment)…and everything else.

At 7PM, after driving nearly 12 hours from VA, we finally arrived our home in FL… nothing is better than coming back, even the air was sweeter. Thanks for our great friends’ help, fish Bully was still alive, everything was fine.
