Rice Noodle -Rice Noodle can be found
in Asian store, the one I was using was actually made by green beans (rice
noodle is made by rice), but Westerners couldn't tell the difference, and I
don't want to confuse them either... so call them all as Rice Noodle.
Soak Rice Noodle in hot water till it's soft then cook them in wok with
water, add seasonings; vegetables; bean curd products (I used 'Shui Mian
Jin' this time which can be found in Chinese store or you make it by
yourself... make a dough as you are going to make Pizza, then wash it in the
water till white flour is gone, only grey type of stuff left... confused?
hehe... I will try to make one and take a picture to demonstrate it).
I have added a few egg slice (stir eggs then fry them in pan, slice the flat
cooked egg) in the soup too to enhance a bit color. You can add anything you
like in the soup. Be careful though... don't cook the soup too long time,
after the soup is boiled, 10 minutes should be enough. Taste it if you are
not sure how long do you need to cook for the soup. |
